At Bella’s Bread and Butter, we pride ourselves on having the opportunity every day to provide people with wholesome, fresh, organic bread. We believe in sharing. We believe in community. We believe in breaking bread.

Here at Bella’s, we don’t believe in recipes, but rather in hard work. We believe that hard work pays off. If you’re willing to work hard every day and every night, all night, towards any goal, we believe you will succeed.

But making bread is not like other things. Making bread is a different kind of labor. It is a labor of passion. It is a labor of love.

WHAT WE DO

The Perfect Croissant?

  • The search for the best croissant and a perfect loaf is a never-ending task. As head baker here at Bella’s, I feel like there will always be something to learn and ways to improve my skills.
  • How many layers should a croissant have?
    Should it be more crispy, should it be more fluffy?
    These are all questions I ask when we are laminating our butter sheets into the dough.
  • How open should the crumb be?
    How crunchy should the crust be?
    These are all questions I ask myself daily when making the bread.
  • After years of baking, I’ve come to the understanding that there is no best, there is no perfect; there is a superior product, and there is what you prefer.

What makes a superior product?

  • The ingredients
    The method is the way we go about accomplishing our layers. It is the level of care we put into every pastry and every loaf. Here at Bella’s, we hand-roll and hand-make every pastry and every loaf.
  • The method
    For the ingredients, we use only the best we can get our hands on. Local organic flour from Northern California is shipped in weekly, at three times the price of generic, mass-produced bakery flour. We refuse to use seed oils in our baking; but rather:
    . whole butter
    . single-origin pure olive oil
    . avocado oil
    All of this we hope to bring together to create that superior pastry, that superior loaf, which enables us to share that passion, that care, and that love that you feel when sitting at our table.
    This is why we chose communal tables in our outdoor seating garden, because we believe that food is a conduit that allows us to create a space where people can come together and share their time, and maybe, for that moment, authentic connection.
